Banana Bread…yum!

Cait, who writes the Pretty and Fun blog, asked via a Tweet today if anybody had a great banana bread recipe. I promised her that I would blog the world’s GREATEST banana bread recipe. I’ve made it in a bread pan and I’ve made it in muffin tins. I leave the nuts out (just personal preference).

This recipe comes from the Delicious Amish Recipes, People’s Place Book No. 5 by Phyllis Pellman Good. If you’ve never been to the Amish country, you must go. Good people. Good food. Good times.

4 cups ripe bananas, cut fine
2 eggs, beaten
1 1/2 cups sugar
1/2 cup oil
1 tsp. vanilla
1/2 cup nuts, chopped
2 cups flour
2 tsp. baking soda
1 tsp. salt

1. Cream bananas, eggs, sugar, oil and vanilla together until smooth. Stir in nuts.
2. Sift together flour, baking soda and salt.
3. Add dry ingredients to creamed mixture, blending just until all ingredients are moistened. Do not over-mix.
4. Bake at 350 degrees for 40-45 minutes in a greased pan.

Then try to wait until it cools just enough that you won’t burn your tongue and enjoy!

    Must try this. Sounds like a good distraction from the work I ought to be doing!

      Yes! Definitely stop all work and make this bread. You’re gonna love it! The whole recipe book is fantastic!
