Pin Me ~ Week Five ~ from my Recipes Board ~ Pumpkin Cornbread

So I hadn’t planned on doing another pin from my recipe board so soon….but sometimes necessity wins out.

The motor on the furnace blew and it’s C-O-L-D. Making something in the oven at least heats up the kitchen a bit so that’s why I went in search of a yummy recipe. And I found one in this Pumpkin Cornbread.

Ingredients:

1 cup all purpose flour
1 tablespoon baking powder
1 teaspoon kosher salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup light brown sugar
1 cup cornmeal
2 large eggs
1 cup pumpkin puree
1/4 cup olive oil
1 tablespoon molasses

Directions:

Ingredients

Preheat the oven to 400 degrees. Grease an 8×8″ cake pan.
In a medium bowl, whisk together the flour, baking powder, salt, spices, brown sugar, and cornmeal; set aside.

Dry ingredients

In the bowl of a stand mixer fitted with the paddle attachment, lightly beat the eggs, and then stir in the pumpkin, oil, and molasses.

Wet Ingredients

Stir the wet ingredients into the dry ingredients just until combined, and then pour the batter into the pan, smoothing the top.

Bake 25-30 minutes or until toothpick inserted in the center comes out clean.

This recipe makes 12 cornbread muffins, reduce baking time to 10 to 12 minutes

Oh I How I Love My Cup of Joe

Mmmm….It’s 3:30 in the afternoon and I’m still thinking about my morning cup of coffee.

Drinking coffee is a ritual for me. I’m not a morning person so having coffee helps kick-start my day. And a really good cup of Joe can really set the tone for my day.

Today is another gorgeous September day with sunshine and a gentle breeze. I poured myself a cup of Café Verona and headed out in the car. By the second sip, I was in such a good mood that I turned up the radio, opened the sun/moon roof and drove all the way to the office shimmying my shoulders.

My first beer was a Guinness at Fiddler’s Elbow in Rome. My first cup of coffee was actually an espresso at my University’s café bar. It’s no wonder that I came back to the States thinking all beer and coffee should be brewed dark and delicious.

I am someone who can drink coffee at any time of the day. And if I have a particularly delicious cup after dinner at a restaurant, I’ll go back to them even if the food was so-so just so I can savor their cup of Joe.

Over the years, I’ve come to love some coffee beans more than others. I’m rather fond of (in no particular order): Starbucks Café Verona, Dunkin Donuts, Raven’s Brew Deadman’s Reach.

The only thing better than dark coffee is combing it with my other favorite food pumpkin! While I am never happy to see summer leave, I do look forward to the changing colors of the leaves, New Jersey Devils hockey and Pumpkin Spice Lattes.
